Onion chutney


Ingredients:-

Onion (big) 3 nos

Coconut (fresh) 1 Cup

Seasame seeds (til) 1/2 cup

Green chillies 2 nos

Tamarind Little

Salt

Method:-

1.Take little oil in a kadai, fry onions till brown in colour

2.Fry til and green chillies.

3.Grind all the ingredients into fine paste

Serve it with plain dosa/wheat dosa, recipe of wheat dosa is here

Wheat Dosa


Ingredients:-
  • Wheat flour (atta) 2 cups
  • Rice flour 1 cups
  • Buttermilk (sour) 1/2 cup
  • Green chillies (chopped) 2

For tempering:-

  • Oil 1 tbsp
  • Mustard seeds (rai) few
  • Cumin seeds (jeera) few
  • Curry leaves few

Method:-

  • In a bowl, mix wheat and rice flour with buttermilk,salt and green chillies
  • Heat oil in a pan, add mustard seeds,cumin and curry leaves.When they splatter switch off the stove.
  • Pour the tempering into the batter and let it ferment for 1 hour.
  • Heat a non-stick tava.Pour a ladleful of the batter and spread it evenly.Sprinkle oil and turn it over once until brown.

Serve hot with onion chutney (here) I learnt this dosa from my m-law.

Rava Idly

I ate rava idly for the first time after i got married.My m-law used to make the rava idly with MTR rava idly mix, which is very easy to make (just add curd to the mix and steam the idly).
I make this idly very regularly.The below recipe i got it from the net.It came out very soft.

Ingredients:-


Semolina (sooji) 1 cup

Mustard seeds(rai) few

Ginger chopped small piece

Channa dal 1/2 tsp

Green chillies 2 nos

Curd 1 cup

Oil 2 tbsp

Soda 1/4 tsp

Salt according to taste

Method:-

1.Heat oil in a pan, add mustard seeds, when seeds are popping,add channa dal,green chillies and giner.

2.Now add rava and mix well and switch off the stove.

3.Then add curd, soda and salt.Leave it for 30 minutes.The batter should be of normal idly batter consistency.

4.Grease idly stand and pour the batter and steam if for 12-15 mins.

5.Serve idly with putnalu chutney (here)

Putnalu pachadi (roasted channa dal chutney)

Ingredients:-

  • Fresh coconut 1/2 cup

  • Green chillies 3 nos

  • Roasted channa dal (putnalu pappu) 1/4 cup

  • Salt according to taste For seasoning:-
  • Oil 2 tbsp
  • Mustard seeds(Rai) Few
  • Udat dal Few
  • Red chillies 2 nos
  • Curry leaves Few

    Method:-
1.Grind the ingredients into fine paste adding little water. Take a kadai add all the seasonings.

2.Pour the seasoning on the chutney and serve.

This chutney is an accompaniment for plain dosa,masala dosa,idly,rava idly and vada.

Chicken burji

Ingredients:-

Chicken 500 gms

Capsicum 500 gms

Egg 2

Tomato sauce 2 tbsp

Soya sauce 1 tbsp

Pepper powder 2 tsp

Red chilli powder 1tsp

Ginger garlic paste 1 tbsp

Food colour 1 tsp

Turmeric powder 1/4 tsp

Curry leaves few

oil 5tbsp

Method:-

1.Take chicken in a pan, add ginger garlic paste,red chilli powder,turmeric powder,food colour, salt and little water.Cook till all the water gets dried.

2.Now add egg,pepper,soya sauce,tomato sauce and mix it well and keep aside.

3.Heat oil in another pan add curry leave and capsicum.Add little salt and fry till capsicum is cooked.Now add the chicken mixture and cook till the curry is dry.

Instant Vada


Ingredients:-
Rice flour 1 cup

Maida 1 cup

Sooji(semolina) 1 cup

Onion 1 no finely chopped

Green chilli paste 1/4 tbsp

Curry leaves few finely chopped

Coriander leaves few finely chopped

Pudina leaves few finely chopped

Oil to deep fry

Salt

Method:-
1.Mix all the ingredients with little hot oil into a soft dough.
2.Apply oil on a plastic sheet,take lemon size balls and flatten it on the plastic sheet and make a hole in the center of the vada(like a doughnut) so that it gets cooked evenly.
3.Deep fry the vada in the hot oil until light brown in colour and cripsy and take it on a tissue paper so that the tissue absorbs excess oil.

Serve hot with chutney powder or green chillies chutney.

This recipe taste similar to the traditional medu vada.

Rava Kesari (Sooji Halwa)

The halwa is very simple recipe and easy to make.I make it every thursday as prasad,i think it is an excuse for me to eat sweet.

Ingredients:-

Sooji (samolina) 1 cup
Sugar 1 1/2 cups
Water 1 cup
Elachi 2 nos
Food colour 1/4 tsp
Ghee 1/4 cup
Cashew and raisins

Method:

1.Heat ghee in kadai, fry raisins and cashew and keep aside.
2. In the same kadai, add the rava and fry in slow flame stiring continuously careful not to burn for 5 mins till the raw smell goes

3.Boil water, add the rava slowly continuosly stirring with one hand without forming lumps. Now add food colour.

4. When all the water gets absorbed and the rava is cooked well, start adding the sugar and keep stiring for some more time until it leaves the kadai5.Now add elachi,cashew and raisins.

Palak Paneer Burji



Ingredients:

1/2 cup paneer (grated),
2 cups palak (chopped),

1 large onion,

1 tbsp ginger and garlic paste,

1/2 tbsp coriander powder,

1 tsp garam masala powder,

1/2 tsp chilli powder,

4 tbsp oil,

1/4 tsp zeera (cumin seeds),

Kasuri menthi leaves as per taste,

Salt to taste,

Chopped coriander leaves to garnish.

Method:-

1.Take oil in a handi, add zeera, when zeera is fried add ginger garlic paste stir for few min

2.Add chopped palak. Cook till the palak is cooked, if necessary add little water.

3.Then add kasuri menthi leaves,coriander powder,salt and chilli powder.Cook for another 2-3 min.

4.Then add grated panner, mix it well and cook for another 5min or untill all the water is dried.Before switching off the stove add garam masala and garnish with coriander leaves.

Capsicum Rice

The idea of blogging is given to me by my classmate and friend philip.I thank him for introducing me to the world of blogging.I love cooking, and happy to post all those recipes done by me in my blog.I am starting my foodie blog with my favourite recipe.


Capsicum Rice




Ingredients:-

Rice 500 gms

Capsicum 3 nos

Salt


Masala:-


Channa dal 1 tbsp

Tur dal 1tbsp

Red chillies 3 nos

Groundnut 3 tbsp


Sesame seeds (til) 1 tbsp

Seasoning:-
Clove 1 nos

Cinnamon 1 nos

Mustard seeds 1 tsp

Cumin seeds 1 tsp

Method:-

1.Cook rice with 1 tbsp oil.

2.Dry roast channa dal,tur dal,til,groundnut and red chillies.Make coarse powder, this mixture can be stored for long.

3.Heat oil in a pan, add clove,cinnamon and then add mustard,when mustards crackles add cumin and capsicum pieces.Now add salt and cook till capsicum changes colour and is cooked.

4.Add the above powder and mix it well.Cook for 3 min


5.Add rice and mix it well
