Boorelu and Sesame (nuvullu) Laddu--- Indian Cooking Challenge

Boorelu


Ingredients :-


For the outer layer

Black gram dal/ Urad dal - 50 gms
Rice 5 tbsp

For the Filling

Bengal gram/Channa dal - 1 cup
Grated Jaggery - 1 cup
Fresh Coconut - 1/4 cup (grated)
Cardamom powder - 3/4 tsp
Oil for deep frying

How to make:-

Wash and soak Urad dal and rice for 4-5 hrs. Grind both to fine paste adding very little water.The batter should be thick.

For the filling

Pressure cook the channa dal.
Then once the dal is well cooked, drain and cook it along with the jaggary.
Cook till dry and make a smooth paste in the mixer and grated coconut and mix it thoroughly and cool.
Divide them into equal balls.
Heat oil in kadai ,once the oil is hot,then dip each ball in the Urad dal batter.
Then drop them into the hot oil. Turn and cook on all sides. It hardly takes more than 2-3 mins to get cooked. Drain them on to a tissue.



Sesame Laddu

Indredients:-

Seasame 1 cup
Jaggery 1/4 cup (can be adjusted according to taste)

How to make it:-

Dry roast seasame in a tawa and let them cool.
Once they are cool, take grated or powdered jaggary and run in a mixie.
When you run in mixie, it becomes little oily which will help in holding the laddo shape.

Shami Kabab And Our Friday Lunch

Shami kabab is favourite snack in India and Pakistan.Minced meat and channa dal/Bengal garam dal cooked in a slow process and minced with many spices.It is shallow fried on the tava and served with mint chutney.
Ingredients:-
Minced meat 1/2 kg
Channa dal 2 tbsp (soaked for 1/2 hr)
Coriander powder 1 tsp
Cumin powder 1 tsp
Garam masala 1 tsp
Garlic flakes 10 nos
Egg 1
Lemon juice 1/2 tsp
Cinnamon 2 pc
Cloves 3
Ginger 1 big pc
Cardamom 2
Pepper a pinch
Chilly powder 1tsp
Coriander and mint leaves few
Oil 10 tbsp
Salt as per taste
How to make:-
Wash and drain the mince and mix channa dal,whole spices,onions,a cup of water and salt to taste. Cook till dry.
Remove from fire and add ginger, garlic, pepper, chilli powder, coriander powder and cumin powder.
Then grind the mixture into fine paste and knead into dough. Add chopped lemon juice, coriander, mint leaves and salt as per taste.
Make lemon sized balls and make flat patties.
Beat egg and dip the patties in the batter. Shallow fry till brown in colour.
Serve with mint chutney.
I served it with mint raita.
Mint raita
Ingredients:-
Curd 1 cup
Mint few leaves
Coriander few leaves
Cumin seeds 1 tsp
Salt as per taste
Make smooth paste of cumin seeds, mint and coriander leaves. Add curd and salt and mix thoroughly.

Hubby loves biryani, be it Hyderabad or Pakistani biryani.He just loves biryani.Our Friday menu is fixed, it is Hyderabad biryani,mirchi salan and raita.This i have been doing since last 6 years. Kids also got used to my fixed dishes on Fridays, only thing I do is before mixing the biryani I take the unmixed rice and give that for the kids to eat with raita.

Rogan Gosh (Meat cooked in yoghurt and whole spices)

Last weekend i brought two recipes books (Curries & rice and Tikkas & Kababs).Since last three days i am stealing the recipes from that book and cooking it.This curry i made it last night for dinner with chapati.Had rogan gosh in the restaurants but never made it at home.This came out very well.


Ingredients:-


Lamb 1 kg (cut into cubes)
Butter 3/4 cup
Asafoetida (hing) a pinch
Green cardamon 10
Cinnamon 3 sticks
Cloves 5
Ginger and garlic paste 3 tbsp
Yoghurt 2 cups
Deghi mirchi powder 1 tbsp
Salt to taste
Water 2 1/2 cups


Method:-

Heat clarified butter in a kadhai.Add hing,green cardamons,cinnamon and cloves.Saute till they crackle.
Add onions and stir fry till golden brown
Stir in ginger and garlic paste and saute for 2 minutes.
Add lamb cubes and stir fry for 15 minutes.
Add the remaining ingredients except water.Cover and cook on low heat for 30 minutes.
Increase heat and stir fry till the oil separates.
Add water and pressure cook for 5-6 whistles.
Serve hot with parathas or rotis.

Chicken Fry --- KFC Style

Ingredients:-


Chicken 5 pcs
Ginger garlic paste 1 tbsp
Maida 1/2 cup
Bread crumbs 1/2 cup
Egg 1
Red chilly powder 1/2 tsp
Coriander and mint leaves few
Salt as per taste
Oil for deep frying


Method:-


Wash chicken pieces and soak it in the warm water with salt for 1 hour.
Beat egg and mix salt,ginger garlic paste,red chilly powder,coriander and mint leaves.
Mix bread crumbs,maida and little salt.
Pat dry the chicken pcs and dip in the egg mixture.
Then coat the chicken pcs in the maida and bread crumbs mixture.
Deep dry in the oil and take it on a tissue.


I got this recipe from a tv show and they taste similar to KFC.This recipe is not for the people who are very health conscious.My kids loved it.


PS:-Once you coat chicken with maida and bread crumbs,shake the pcs so that excess flour comes off and oil is not spoiled when frying

Vinayaka Chavathi

I never did Vinayaka chavathi alone and this is my first vinayaka chavathi which i did i alone without the guidance of my mom or my m-law.Last year i was fortunate to celebrate the festival with my mom who did puja and read ganesh story.After coming here to gulf i never got holidays on our festivals and there is no public holidays for our festivals.So i always used to go to work and my m-law who was staying with me used to do puja and in the evening i used to eat the delicacies.My friend sandhya gave me the sholkas to do the puja and mom told me how to make the delicacies.

Called up mom and took the recipe of undralu and kudumulu and made pasham which my m-law used to make it.That came out well but i am not sure of the measurement hence i wont be writing the recipe of pasham.

Ingredients:-


Rice flour 1 cup
Channa dal 2 tbsp (soaked for one hour)

Oil 1 tbsp
Water for making dough


Method:-


Make a hard dough with riceflour,channa dal,salt,oil and water.Make desired size balls and steam the way idles are steamed for 7-8 minutes.

On the day of the festival we are supposed to see nine ganesh.In Hyderabad each and every lane ganesh idol are worshipped and we all used to visit nine ganesh.Now here i hardly know anyone who celebrate the festival,today i will blog hop and see ganesheshas in the other blogs.

Simple Cabbage Fry

The only veggie i don't like eating is cabbage.My sisters and my mom like it a lot and i am the only one who hate cabbage in my house.After marriage my m-law used to cook cabbage in my house and it is my hubby's favourite.Till now i never made cabbage curry and other day hubby said it's been long i didn't eat cabbage,please make cabbage curry.Since he asked me i made this fry and vaguely remember the recipe.I gave it a try and for the first time in my cooking,cooked it without tasting it for salt.Hubby liked it a lot and ate the curry with flukas for the dinner.

Ingredients:-

Cabbage 1/2 kg chopped
Channa dal 1/2 cup (soaked for one hour)
Onions 1 chopped
Green chillies chopped
Oil 2 tbsp
Red chilly powder 1 tsp
Turmeric powder 1/4 tsp
Salt as per taste

Seasoning:-

Rai 1/4 tsp
Udad 1/4 tsp
Red chilly 1 broken into two pc
Curry leaves few

Method:-

Boil cabbage and channa dal with turmeric for 7-8 minutes or until channa dal is soft enough.Sieve in a strainer and keep aside.Once cool squeeze water out.
Take a kadai,heat oil and add all the seasoning.When the seasoning splutter add onions and green chillies.
Saute onions till light brown in colour and cabbage,channa dal and salt.
Fry till cabbage turns colour and channa dal is fried .
Serve it with rotis or hot rice and sambar.

Mixed Sprouts Kichidi

Ingredients:-

Rice 2 cups
Green moong dal sprouts 1 cup
Red beans sprouts 1 cup
Peanuts 1/4 cup
Tur dal 1/4 cup
Tomato 1 big (chopped)
Onion 1 (chopped)
Green chillies
Ginger 1 inch pc (chopped)
Zeera 1/2 tsp
Oil 2 tbsp

Method:-

Soak rice and dal for 1 hour.
Heat oil add zeera,ginger,onions and green chillies,saute till they are fried.
Add peanuts,moong sprouts and red beans sprouts and saute well for 3-4 minutes.
Then add salt and water.(For 1 cup rice i took 1 1/2 cup of water)
When water starts boiling add rice and tur dal.Cover and cook until the rice and tur dal are soft.

I got this recipe from a tv program .My kids liked it a lot.

Aloo bhat (Potato rice) and Samiya Payasam-- Microwave

Aloo Bath
Ingredients:-
Potatoes 1/2 kg
Basmati rice 1/2 kg
Coconut 6 tbsp (fresh grated)
Green chillies 4
Onion 1 big
Ginger garlic paste 1 tbsp
Coriander 1 tbsp
Clove 3
Cinnamon 1 inch pc
Cardamom 3
Bay leaf little
Turmeric powder 1/4 tsp
Salt as per taste
Oil 4 tbsp
Method:-
Cut potatoes into big pieces and soak in the water till use.
Soak rice for 1/2 hour
Make a fine paste of coconut,coriander,Cinnamon and cardamom.
Take 4 tbsp of oil in the microwave safe bowl.Keep in the microwave for 30 secs.
Add onions , green chillies and bay leaf microwave high on 2 min.
Add the grounded masala and ginger garlic paste microwave high for 2 minutes.
Then add potatoes and salt and mix thoroughly and microwave high for 4 minutes or until potatoes are roasted slightly.
Add soaked rice and water.Microwave high for 10 minutes or until the rice is cooked.I used 1 1/2 cup water for 1 cup of rice.

Semiya payasam

Ingredients:-

Vermicelli 1 cup
Milk 3 cups
Sugar 1 cup (can be adjusted according to the taste)
Cardamom 1 (crushed)
Cashew and raisins few
Ghee 2 tbsp

Method:-
Take ghee in a microwave safe bowl and add vermicelli and microwave high for 2 minutes or until the vermicelli is little brown in colour.
Remove vermicelli from the bowl and add cashew and raisins,microwave high for 1 minute
Remove cashew and raisins and add milk and microwave high for 10 minutes.Now the milk will be reduced to half.
Add the roasted vermicelli and sugar.Mix thoroughly and microwave high for 5-6 minutes or until the vermicelli is soft.
Lastly add cardamom,cashew and raisins and mix thoroughly and serve hot.

Besan curry

Yet times when i don't feel like going out to buy vegetables i resort making something jatpat as well as yummy.This curry goes very well with hot rotis and i learnt this from my m-law.

Ingredients:-

Onion 1 sliced
Green chillies 2 silted
Tomato 1 chopped
Ginger 1/2" pc
Besan/Chanaga pindi 5 tbsp
Lemon juice 2 tbsp

Seasoning:-
Rai 1/2 tsp
Red chillies 2
Curry leaves few

Method:-

Mix besan with little water and keep aside.
Head kadai,add all the seasoning and when curry leaves are fried add ginger,onions and green chillies.Fry for just 2 minutes (don't fry it completely).
Add tomatoes and fry just about done,be careful not to fry completely.Add 2 cups of water.
Bring into boil.Add besan into the boiling water and stir simultaneously.Cook for 3-4 minutes until semi liquid.
Just before serving add lemon juice and serve it with rotis.

Murmura Laddu/ Rice Puff Balls

Ingredients:-

Puffed rice 500gms
Jaggery 1 cup
Elachi 2
Water 1/2 cup

Method:-

Take a heavy bottom vessel add water and jaggery.Let the jaggery melts for 5-10minutes.
Cook on a medium heat until syrup begins to concentrate.Take a small plate with water,add the jaggery syrup,if you can make a ball of it then the syrup is ready.
Add murmura and constantly stir it.Now add elachi powder.Within 2-3 minutes murmura and jaggery gets mixed up.
Wait for 5 minutes,wet your hands with little water and make round balls.

These are very easy to make and even kids can do it.The above laddus are done my daughter.

Mutton Paya Soup/Lamb Trotters and Awards


Lamb trotters are the lamb legs and they are burnt before selling.The trotters has to be cleaned and small strands of hair has to be removed.This is soup is very healthy mostly given to children, to the new mothers and also to recuperating patients for its nourishments.

This soup i remember my mom used to give me as i was very thin and she used to say that this soup is very healthy for the kids.My kids also love this,i usually make this as their breakfast on holidays.

Ingredients:-

Lamb trotters/legs:-4 nos
Onions 1 (chopped)
Gralic - 5-6 pods (chopped)
Black Peppers -- 10 nos
Coriander (whole) 1 tbsp
Green chillies 2(slited)
Zeera - 1 tbsp
Oil 2 tbsp
Salt as per taste

Method:-

1.Clean mutton legs throughly and check it for small hair which has to be removed.

2.Mix trotters,onions,garlic,black pepper, coriander, zeera, chillies and oil.Pressure cook until you get 5-6 whistles.

3.Allow it to cool and add salt,again pressure cook until you get 2-3 whistles.

Before giving it to kids filter the soup and let it be warm.This taste good with hot dosa.

PS:- Remember to add salt after step two not before that because if salt is added intially the trotters takes time to cook.

Mathri

Ingredients:-

Plain flour 2cups

Samolina(bombay rava) 1 cup

Ajwain (caraway seeds) 1tsp

Butter 1tsp

Salt as per taste

Oil for deep frying

Method:-

Mix plain flour,rava,butter, ajwain, salt and warm water to make a smooth dough.

Make small balls out of the dough.Roll out each ball into a disc,gently prick with a fork.

Keep aside for about 2o minutes and deep dry in a medium hot oil until brown in colour.Drain well on a tissue.

Banana Tea Bread

Ingredients:-

Plain flour 1 cup

Oatmeal 1/4 cup

Butter 1/2 cup

Sugar 1/2 cup

Baking powder 2 tsp

Cinnamon 1/4 tsp

Eggs 2

Banana (ripe) 5 nos (peeled and mashed)

Walnuts few (roughly chopped)

Method:-

1.Preheat oven 160 degree celcius.

2.Mix flour,oatmeal,butter,sugar,baking powder,cinnamon and eggs.Beat together until evently mixed.

3.Spoon the mixture into the tin (baking tin should be buttered and dusted with flour).

4.Sprinkle the chopped the walnuts and bake for 60 minutes at 160 degrees.

5.Allow the cake to cool in the tin for 5 minutes,then carefully turn out on the wire rack.
