Khatti Dal

Khatti dal is the most common side dish in hyderabad and it is made with lentils. This is made with toor dal or masoor dal, mostly it is in running consistency. Khatti dal means tangy lentils. I prefer eating khatti dal with roti or fulkas. Recipe is simple and quick to make. Many prefer this khatti dal with rice and with any non-veg fry. Here is the recipe.



Ingredients:

Toor dal/Masoor dal 1 cup
Onion 1 chopped
Tomato chopped
Green chillies 4
Turmeric powder a pinch
Tamarind a small piece

Pressure cook all the above ingredients. The dal has to be soft and mash the dal.

For seasoning :-
Rai/mustard seeds 1/4 tsp
Zeera/cumin seeds 1/4 tsp
Curry leaves few

Season the dal with the above ingredients and garnish with coriander.

Egg Dal

I fell in love the first time i ate dal with egg,what a superb combination.First time i read about this dal in Hamaree rasoi.I am not posting the recipe as i followed the recipe given by deepa to the core.Here are the few pictures which i can't miss clicking them.For the recipe do visit Hamaree rasoi and for baking goodies too....

Mixed Dal




Ingredients:-

Green Moong dal
Udad dal
Toor dal
Yellow moong dal
Chana dal

All dal in the same quantities.

Onions 1
Green chillies 1
Coriender leaves few
Turmeric powder a pinch

Soak dal for 2 hours.
Pressure cook all the dals along with one onion,one green chilly,turmeric powder and coriander leaves.

For tempering

Rai 1/4 tsp
Udad dal 1/4tsp
Zeera 1/4 tsp
Hing little
Chopped onions 1
Chopped green chillies 1
Coriander leaves few
Ginger chopped 1/2''
Red chillies 2
Curry leaves few
Oil 2 tbsp
Salt as per taste

Once the dal is cooked mash it very lightly.

Heat oil in a kadai and saute rai,udad,zeera, hing,red chilly and curry leaves.Add in ginger,onions and green chillies.Fry for a while.
Add in dal and salt.If the dal is dry add little water and cook for 4-5 minutes.Garnish with coriander leaves and serve hot with hot rice or rotis.

Chinta Chiguru Pappu (Tender tamarind leaves and dal

Simple and comfort food.As i mentioned before that chinta chiguru (tender tamarind leaves) i got it from weekly market and i made this dal.Here goes the recipe:-

Ingredients:-

Tur dal 1 cup
Onions 1
Green chillies 4
Turmeric powder 1/2 tsp
Oil 1 tbsp

Pressure cook all the above and keep aside until use.

Chinta chiguru 1 cup
Onions 1

For seasoning

Rai 1/4tsp
Zeera  1/4tsp
Hing a pinch
Red chillies 2
Curry leaves few
Garlic 1 crushed
Oil 2 tbsp



Take oil in a pan.Add all the seasoning and once they are fried add onions and saute till onion change colour.Then add chinta chiguru leaves.Add salt and cover the pan for 5-6 minutes.

Add cooked and mashed dal to the leaves.Mix well.If the dal is watery cook for few more minutes until the reduced thickness is achieved.

Serve hot with rice and a side dish.

Palakura Papu (Dal and Spinach)

Dal is cooked almost very day for lunch in most of the households in South India.Whether it is tomato dal,spinach(Palakura) dal,fenugreek (menthikura),mango dal etc.

This is very easy to prepare just add dal with any of the above and pressure cook it along with onions,green chillies and do the seasoning.

There is a another way to cook Palakura pappu which my mother inlaw does.She pressure cooks Toor dal and boils spinach.Later she mixes both and does the seasoning.Both the method taste different.The first method, the taste of dal dominates and second method taste of Spinach dominates and has a little different colour.

When i am hard pressed with time i do the first method or else i prefer doing the later method even though it is little lengthy.Here goes my m-law recipe for the simple comfort food...

Ingredients:-

Toor dal (kandi pappu) 1 cup
Spinach (palak kurra) 1 cup (chopped)
Tomato 1 (chopped finely)
Onions 1 chopped
Green chillies 2 slited
Turmeric powder 1/2tsp
Red chilly powder 1 tsp
Salt to taste

Seasoning

Oil 1 tbsp
Rai 1 tsp
Udad dal 1tsp
Cumin seeds 1tsp
Red chilly whole 2
Hing a pinch
Curry leaves few

Method:-

Pressure cook toor dal (kandi pappu).When cool mash it into smooth paste.
Boil Spinach for 5 mintues.Drain the water and keep aside.Don't throw the water.
Take oil in a pan,when hot add hing.Then add all the seasoning.When they are fried add tomatoes.
Cook until tomatoes are soft.Then add the dal and spinach.
Mix well and add the water which was kept aside after draining the boiled spinach
Add salt and mix well.
Serve hot with rice or chapati.
