Ragi dosa

 My mom is very fond of ragi, she makes ragi Java (porridge) regularly and now after her cancer treatment ragi has became her staple food. She is on liquid diet since last four months. She takes this porridge which my sister prepares it in very liquid form as my mom can’t chew any food. This ragi apart from milk is giving all nutrients my mom needs in a day. Touchwood my mom is recovering well.

Now coming to this post, since I stopped eating any white other than milk and yogurt. I stopped eating rice instead I am substituting rice with millets. I will be posting millets dosa and idles. Today it is ragi dosa. This dosa is done in same way as our regular dosa,it’s just the replacement to rice. Same as regular dosa this dosa too needs to fermented.

How I made this dosa ?

Ragi 2 cups

Udat dal 1 cup

Fenugreek (menthi) 1/2 tsp

Oil to drizzle on dosa

Soak all three in the morning. Grind it into smooth batter. Let the batter rest over night.

Next day morning add salt as per your taste and mix well.

For ragi dosa filing.

One onion finely chopped

One green chilly chopped

Small size tomato chopped

Sesame seeds 1 tbsp

Lemon juice 1/2 tsp

Fresh coconut shredded 1 tbsp

How to make dosa ?

Place a castor iron pan on the stove. Let it get a bit hot. Dip a brush in oil and rub oil on the pan.

Now take a ladle full of batter and make dosa. Drizzle oil on the sides. Let it cook for a minute and flip the dosa.

Let this side too cook for a minute. Turn the dosa. Add the onion mixture and fold the dosa to half.

This dosa doesn’t need any chutney. My husband added nalakaram to the dosa. What he did was before I added the onion mixture,he sprinkled this nalakaram powder and added the onion mixture. It was yummy.

Set Dosa

I saw set dosa many times in south indian hotels menu but never tried as i am found of masala dosa so when ever i visit hotel for breakfast or dinner i order masala dosa.I was browsing some websites for dosa and came across set dosa.The recipe i am writing here has been adopted from Finger licking food.This dosa has become a quite common in my house.I usually serve set dosa with chutney and sometimes with chicken curry.


Ingredients:-

Rice 2 cups (soaked in warm water for 3-4 hours)
Poha/Attukulu 1/2 cup soaked just before grinding the rice.
Fenugreek seeds 1 tsp
Curd 1/2 cup (sour)
Salt as per taste
Cooking soda a pinch
Oil for frying

Method:-

Grind rice and fenugreek into fine paste.Add poha,curd and salt and grind again into fine smooth batter.

Leave the batter for over night to ferment.

Next day add cooking soda and mix well.

Heat a non-stick pan.apply oil on the pan.Take a big ladle of batter and pour it on the pan.Don't spread the batter unlike normal dosa.

Sprinkle little oil around the dosa and flip it once you notice small holes on the dosa.

Once flipped  let it be there for few more seconds.

Then serve hot with your choice of dip.

Mysore Masala Dosa


Dosa is the most preferred breakfast in any south indian home. And i my house too i make dosa thrice a week.Sometimes i get bored of eating the same dosa.For kids i make cheese,vegetable and egg dosa very often as kids get bored quite easily and can never force them to eat the same thing.

When ever we go out for breakfast or dinner my choice is always masala dosa and when we go to Kamat the only thing i order always is mysore masala dosa.Made masala dosa at home many times but not mysore masala dosa.Remember seeing this recipe at Prathibha's blog The chef and her kitchen.Then browsed her blog for the recipe and made this.Chutney is from my blog which can be find here and mysore masala dosa recipe is from here

Neer Dosa

Dosa is the most preferred breakfast in south india which has become quite popular in the north india as well.Friends who are north indian also prefer dosa for breakfast as it is light,tasty and healthy as well.There are so many versions of dosas.Neer dosa is no fermentation dosa and quite easy to prepare as there is no advance preparation of the batter.Just soad rice for 1 /12 -2 hours (i usually soak it over night and next day morning i grind it) and grind it with fresh coconut.

Ingredients:-

Rice 1 cup (soaked for 2 hour)
Fresh coconut 4 tbsp
Salt to taste

Method:-

Grind the soaked rice,fresh coconut and salt to fine paste.

Preheat a non-stick tawa & spread out a ladle full of batter into it. The dosa should be of
medium thickness.Close it a lid for 1/2 minute.

Remove the lid.Now fold it and serve hot with chutney or any curry.

Bread Dosa


Ingredients:-

Bread slices 10
Sooji/Rava 1/2 cup
Green chillies 2 nos
Curd/Yogurt 2 tbsp
Ginger small pc
Rice flour 1 tbsp
Salt as per taste
Oil for frying dosa.


Method:-

Soak bread in water for 2-3 minutes.Squeeze water and grind with all the above ingredients except oil.


Season with Rai/mustard seeds 1/4 tsp,Urad dal 1/4 tsp,Onion finely chopped and curry leaves.Serve it with any chutney of your choice.

Dosa Varieties and Karivepaku podi (curry leaf powder)

Rava Dosa

Ingredients:-

Rawa/Sooji 1 cup
Maida 1 cup
Rice flour 1 cup
Curd 1-1 1/2 cup
Sugar 1/2 tbsp
Cooking soda 1/4 tsp
Zeera 1/2 tbsp
Curry leaves few
Rai 1/4 tbsp
Salt as per taste
Oil

Method:-

1.Mix rawa+maida+rice flour+curd+sugar+Cooking soda+salt and water.Let it rest for 1 hour.
2.Heat oil in a kadai,add rai+zeera and curry leaves.Once the seasoning is ready,mix it with the batter.
3.Heat a non-stick tawa, rub the tawa with a slice of onion and oil.Take ladle full of batter and spread it on the tawa and put oil around the dosa and flip it once and serve.

Ingredients

For dosa:
1 cup urad daal
3 cups rice

For Onion Paste:
2 large onions
1/4 tsp jeera powder
1/4 tsp ginger paste
1/4 tsp garlic paste
1 tsp red chili powder
Coriander leaves few

Make paste of all the above and keep aside

Method:-
Soak urad daal and rice preferably overnight and grind to make a smooth paste and let it
marinate over night. Next day morning add salt and mix it thoroughly.

Put dosas on a hot pan and with a tea spoon spread the paste all along the dosa to cover
almost the entire dosa.

Ingredients

Udad dal 1 cup
Moong dal 1 1/2 cup
Salt as per taste
Oil
Onions chopped finely 1
Green chillies chopped finely 2
Ginger chopped finely 1" pc
Coriander chopped finely.

Method:-

Soak Moong dal and udat dal separately for 3-4 hours.
Grind them together into a smooth batter and this batter doesn't need to be fermented.
Make thick dosa.Spread onions,green chillies,ginger and coriander on the dosa and serve.

This is my mom's recipe,when she was here she did it and i am posting it now.

Ingredients:-

Curry leaves dried 2 cups

Senaga pappu (channa dal) 4 tbsp

Minappa pappu (udad dal) 2 tbsp

Cumin seeds 1 tbsp

Coriander seeds 1 tbsp

Dried red chillis 6-7

Tamarind 1 small size of a lemon

Salt to taste

Oil 2 tbsp

Method:-

1.Take 1 tbsp of oil in a kadai,add channa dal and udad dal,fry until both changes colour and don't burn them.Remove from the kadai and keep aside.

2.In the same oil add coriender seeds and zeera.Toss them till they are brown in colour.Remove it and keep aside.

3.In the same kadai take the remaining oil and fry red chillies for 2-3 minutes.Keep aside.

4.Add curry leaves and roast till the leaves are crispy.Let all the ingredients cool.

5.Once cool,grind both the dals until coarse,followed by cumin and coriander seeds.

6.Add tamarind and red chillies and grind again.

7.Lastly add curry leaves and salt and grind into smooth powder.

Serve it with hot rice,dosa or idly.

Bellam Dosa/Sweet Dosa

My daughter had this dosa in her school.Her friend gave her one small piece of sweet dosa.From that day she was pestering me do this dosa.Google aunty helped with this recipe and it was great hit with her.Now she is having summer vacation and everyday she is asking me to make this.This tastes good with ghee.Here is the recipe:-

Ingredients:-

Raw rice - 1 Cup
Rice flakes - 1 tbsp
Methi seeds - 1 small spoon
Jaggery - Half Cup
Coconut - 1/4 Cup

Method:-

1.Soak raw rice, rice flakes and methi seeds together in water for one hour
2.Grind them nicely with coconut and jaggery.
3.Put the tava on the gas and prepare dosa by adding little oil. (The gas should be in sim)

The dosa could be served with ghee or butter.

Musti Dosa


Ingredients

Raw rice 2 cups
Urad dal 1/2 cup
Methi seeds 1 tbsp
Poha 1 cup
Grated coconut(fresh) 1/2 cup
Salt as per taste
Method

  1. Soak rice+ urad dal+methi seeds for 2hrs in water .
  2. Grind the above with the grated coconut.When half done add washed(soaked) poha &
    grind to a fine thick batter.
  3. Add salt & mix well.Keep aside for 6-8hrs to ferment.
  4. Preheat a non-stick tawa & spread out a ladle full of batter into it. The dosa should be of
    medium thickness.
  5. Heat it on one side only and serve it hot with onion coconut chutney.

Egg Dosa and Bread Dosa

Egg Dosa

This dosa is the most favourite lunch box tiffin of my daughter.when ever i have dosa batter i make this dosa from my daughter.

Ingredients:-

Dosa Batter
Egg 1
Salt little
Pepper little
Oil

Method:-
  1. Make a regular dosa on the tava.Put the stove on low flame.
  2. Break egg slowly on the dosa. Now with a flat spoon spread out the white all over the dosa slowly and carefully.
  3. Sprinkle pepper and salt to taste. Pour oil all around the dosa.
  4. Cook for a minute or till the egg is done.
Bread Dosa


Ingredients:-
Bread slices - 3 or 4
Dosa batter - 1 cup.
Green chillies - 2 (optional)
Onions - 1 finely chopped (optional)
Oil


Method:-
  1. Mix onions and green chillies and coriander leaves to the dosa batter.
  2. Heat the tawa, when hot smear with oil.
  3. Dip the bread slices in the dosa batter and place it on the tawa.
  4. Smear some oil around the bread slice.
  5. Cook till it is golden brown on both sides.
I have not used onions and green chillies as my kids dont eat.I served bread dosa with tomato sauce.They liked it a lot.

Pesarattu (Whole Moong dal dosa)

Pesarattu with ginger chutney

Ingredients:-

Pesarapappu (Moong dal) 2 cups
Rice 1/4 cups
Ginger 1/4 inch
Green chillies 2 nos
Jeera 1 tbsp
Oil
Salt as per taste


Method:-

1.Wash rice and Pesarappu and soak overnight.

2.Morning drain all the water, add green chillies,ginger, salt and grind to smooth consistency adding little water and it should be like normal dosa batter.

3.Add jeera just before making the dosa.

4.Wipe the griddle with a onion and take a ladle full of batter and spread it in a circular fashion.

5.Add little oil and turn it over and cook for another few seconds.Sprinkle finely chopped onions on the dosa and serve

The batter makes around 10-12 dosa.Serve the dosa with ginger chutney(here) This recipe i learnt it from my mother.

Wheat Dosa


Ingredients:-
  • Wheat flour (atta) 2 cups
  • Rice flour 1 cups
  • Buttermilk (sour) 1/2 cup
  • Green chillies (chopped) 2

For tempering:-

  • Oil 1 tbsp
  • Mustard seeds (rai) few
  • Cumin seeds (jeera) few
  • Curry leaves few

Method:-

  • In a bowl, mix wheat and rice flour with buttermilk,salt and green chillies
  • Heat oil in a pan, add mustard seeds,cumin and curry leaves.When they splatter switch off the stove.
  • Pour the tempering into the batter and let it ferment for 1 hour.
  • Heat a non-stick tava.Pour a ladleful of the batter and spread it evenly.Sprinkle oil and turn it over once until brown.

Serve hot with onion chutney (here) I learnt this dosa from my m-law.
