Gongura Pachadi (Red sorrel leaves pickle)



Ingredients:-

Gongura (red sorrel leaves) 1 kg
 Dry red chillies 250 gms
Cumin (jelakara) seeds 4 tsp
Coriander seeds (daniyalu) 4 tsp
Fenugreek seeds (mentulu)4 tsp
Oil 7 tbsp
Garlic (velipayalu) 4
Turmeric (pasupu) a pinch (chitikadu)
Hing (inguva) a  pinch (chitikadu)
Salt as per taste

Seasoning
Channa dal (senagapappu) 4 tsp
Mustard seeds (avalu) 4 tsp
Udad dal (minapappu) 4 tsp

Method:-

Wash gongura leaves and live in the sun to dry till water evapourates.
Take a pan with 2 tbsp of oil.Add red chillies,coriander,fenugreek,cumin and fry.Let it cool and make a coarse powder.Keep aside.
In the same pan remove oil and fry gongura leaves on a low flame.The leaves changes its colour and the quantity is reduced to half.
Once the leaves are cool enough,grind them with 3 garlic,turmeric powder,salt and the powder which you made it before.Don't grind it into smooth paste ,it should be coarse.
Then in a another pan take the remaining oil.When oil is hot add the seasoning,remaining garlic (crushed) and hing.
Then add the gongura paste and saute for a 2 minutes.

This pickle can be stored for one year.

Mixed Vegetable Pickle

Mixed Vegetable pickle is one of the favourite pickle of my family after mango pickle.I always buy this from the stores.In hyderabad my friend used to get this pickle in his lunch box.He always used to get more for me,i just love this pickle.I googled it and got the recipe from one of the sites.From now onwards i will stop buying it as my kids and hubby liked the pickle made by me.Here comes the recipes:-

Ingredients:-
Beans 6-7
Carrot 2
Mango 1
Cauliflower 10florets
Peas (fresh) 1/2 cup
Small onions 10
Green chillies 3
Salt - as per taste
Red Chilly Powder - 2 tbsp
Turmeric Powder - 1 tbsp
Mustard - 2 tsp
Cumin Seeds - 2 tsp
Fenugreek - 1 tsp
Asafoetida - 1 tsp
Oil - 10tbsp
Lemon Juice - 1 big
Ginger(chopped) - 1 inch
Garlic(chopped) - 25 cloves
Method:
1.Chop all the Vegetable and wash it and dry it in the sun for 2-3 hrs.
2.Fry mustard, cumin seeds, asafoetida, and fenugreek without oil. Grind them into fine powder. Set aside.
3. In a frying pan heat the oil 1 tsp of mustard when it pops add chopped ginger, chopped garlic and chopped green chilies and saute for 2 minutes.
4. Add vegetables and cook till they are cooked. Add red chilly powder and turmeric powder. Mix thoroughly.
5. Lastly add grounded masala powder,salt and lemon juice.
6. Keep the pickle in cool,dry place.
