I have been making this big bun since a while. And every time I make I change few ingredients. Sometimes it's just plain buns and sometime it's a desi twist or Italian twist. Today I am posting desi and Italian buns. The adds on like the oregano,jalapeños etc can be added according to once taste. Readers can play around with the ingredients. Here is the receipe.
Ingredients
Butter 4 tbsp
Egg 1
Milk 2 tbsp
1.5 cup water
All purpose flour 5 cups
Instant yeast 3/4 tsp
Salt 1 tbsp
Sugar 3 tbsp
Additional ingredients:-
Jalapeños few
Chilly flakes 1 tbsp
Oregano 1 tbsp
Thyme 1 tbsp
Basil 1 tbsp
Cumin 1 tbsp
How to make the buns ?
Mix water with butter,egg and milk.
Mix dry ingredients, flour, yeast, salt and sugar. And also add additional ingredients.
Now mix the wet and dry ingredients. Knead the dough well and let it rest for one hour.
Wrap a wet towel on the bowl and keep in a warm place in the kitchen.
After one hour again knead the dough. Make small balls and arrange them on a creased baking tray
with gap of 2 inches between each balls.
Now again cover it with a wet cloth for another one hour.
After one hour, apply melted butter and bake in preheat oven for 12 minutes at 350 degrees F.
Yummy buns are ready. I love to eat my buns with hot cup of tea and my kids like to apply little butter.

Dates Ladoo / khajoor laddu
Year is going to end and I was not much active here. I revived by other blog with 30 days posting without a break.
These dates laddu I made it for Diwali. I thought of making something healthy without extra carbos. So these laddus are sugar free as dates itself are sweet.
Dates 2 cups shredded
walnuts 1/2 cup
cashews 1/2 cup
Almonds 1/2 cup
Pista unsalted 1/2 cup
Dry coconut powder 3 tbsp
Ghee 3 tbsp
How to make them ?
Take all the nut in a grinder and crush them. Here we are not making fine powder but coarsley grinding them.
Take a pan. Add ghee.
when ghee melts add dates.
Saute for a while, dates starts sticking to each other.
Turn off the flame. Add nuts.
Take little ghee on palms and make round balls.
In a plate take dry coconut powder and roll the ladoos in it.
Isn't it very simple. The time taken to eat is less than time taken to make them.😜😜😜

No flour oats muffin
These baked muffin are guilt free, no flour muffins. Healthy and can be eaten as breakfast.
Ingredients:-
Eggs 2
Brown sugar 1 cup
Maple or apple sauce 3/4 cup
Milk 1.5 cup
Vanilla essence 1 tsp
Salt 1/2 tsp
Cinnamon powder 1 tsp
Baking powder 1 tbsp
Rolled oats 3 cups
Toppings of your choice.
Method:-
Pre-heat oven. Beat egg . Add all the ingredients and mix well. Let the mixture rest for 30 minutes.
Grease muffin tin with butter and pour the mixture into each cup cake mould. Place your favourite toppings on each muffin.
Bake for 30 minutes in 350 degrees Celsius.

Sour Cream Cookies

Ingredients:-
All purpose flour 1 1/2 cup
Sour cream 1/3 cup
Sugar 1 cup
Baking powder 1 tsp
Baking soda 1/4 tsp
Salt a pinch
Butter 1/3 cup
Vanilla essence 1/4 tsp
Egg 1
Method:-
Beat sugar and butter until smooth.
Mix flour, salt,baking powder and baking soda.
Add egg and vanilla essence. Mix thoroughly. Add the dry ingredients.
Mix thoroughly. Pre-heat oven for 375 degrees Celsius.
Butter the baking tray.
Take a small scope of the batter and place them on the tray with space between each cookie.
Bake for 10 minutes.

Fried Phool Makhana / desi popcorn
Phool Makhana is new to me. I had makhana curry in a punjabi restaurant and loved the taste. Brought this makhana from a indian grocery store. And while browsing Vah chef videos came across this quick, easy and tasty snack. It just took 5-10 minutes to make this desi popcorn and calls for very few ingredients.
Ingredients:-
Phool Makhana 1 cup
Ghee 3 tbsp
Salt as per taste
Red chilly powder 1/2 tsp
Method:-
Mix Ghee with salt and red chilly powder.
Take a pan. When hot add makhana. Saute for 5 minutes and to check if makhana is fried, take one into your mouth and when you bite it you should hear the sound.
Add ghee mixture and mix well. Take out immediately from the stove and serve warm.

Cheese Corn Balls
Daughter celebrated her 8th birthday and as always she wanted a small party at home with neighbor kids. She wanted a theme party and as i was sick last two weeks was not able to plan a theme party ahead. Nevertheless made all the food stuff at home much to her liking and she had a wonderful evening. I made cake pops, cheese corn balls and Oreo medals. Her birthday cake was store brought as i didn't had much time to plan and make the cake. And also i prefer store brought cake on birthdays than me making a cake and be tensed about the out come. Here is the cheese corn balls recipe :-
Ingredients:-
Corn 4 cobs
Cheese (Mozarella 2 cups)
Corn starch 1/4 cup
Boiled potato 2
Salt to taste
Oregano 1 tbsp
Chilly flakes 1 tbsp
Garlic 1 crushed
Bread crumbs
Plain flour
Oil for deep frying
Method:-
Make a smooth running paste with plain flour and water.
Boil corn and separate corn from the cob.
Gently crush corn and mash the potato.
Mix corn, potato,cheese,garlic,oregano,chilly flakes and salt.
Mix well with hands. Make small balls.
Take bread crumbs in a wide plate.
Take each ball dip the ball in the plain flour.
Rotate the balls on the crumbs and take each ball in the hand and gently rotate.
Once all the balls are done, deep fry in batches. Take them on a tissue and serve hot.
The left over balls can be refrigerated and can be fried later on.

Palak Puri / Poori
Puri is a delicacy which every kid enjoys and that too if the puri is fluffy. My younger sister used to love fluffy puri and mom used to give her big fluffy puri to her and normal puri to us. Now my younger girl loves the fluffy puri and even the fluffy reduces she will give that to her sister and will take another hot and fluffy puri. And i should says it's really difficult to take a good picture of fluffy puri, by the time i ready my camera and click the picture...gone the puri becomes flat. Then i make another one...happens the same...then i was tired of taking many pictures so i ended up with the below picture which is not that bad.
Ingredients:-
Wheat flour 1 cup
Maida flour 1/4 cup
Samolina 2 tbsp
Palak puree 1/2 cup
Oil 2 tbsp
Salt to taste
Oil for deep frying
Srivalli a very wonderful and versatile blogger is celebrating her 8th blog anniversary with annivarsary mela and this puri is going for that mela.
Ingredients:-
Wheat flour 1 cup
Maida flour 1/4 cup
Samolina 2 tbsp
Palak puree 1/2 cup
Oil 2 tbsp
Salt to taste
Oil for deep frying
Method:-
Mix all the ingredients and make a hard dough.
Make tennis size balls and with little dry flour, roll out small disc shape flat puris.
Heat oil. Leave one puri at time and press the puri with a ladle so that it puffs up.
Turn and cook on another side,which will take less than a minute.
Take it on a kitchen towel and serve hot with choice of your curry. Best combination with puri is alo curry or chole. I served it with chole.

Chilly Garlic Noodles
This is the simplest noodles i make and delicious too. Got this recipe from my fav chef Sanjay thumma or Vah reh vah chef. Here is the recipe:-
Boiled noodles 2 cups
Garlic 2 chopped finely
Green chillies 2 slited
Olive oil 3 tbsp
Onions 1 chopped finely
Green Capsicum 1 sliced
Soya sauce 1 tsp
Chilly sauce 1 tsp
Pepper powder 1 tsp
Salt to taste
Method:-
Take a pan. Add olive oil in it, once hot add garlic and green chillies.
Just saute for 1/2 a minutes and add onions. Sprinkle salt.
Fry for a while until onions turn light pink in colour.
Add capisicum. Saute for a while, here we don't want capsicum to fry entirely. It should me some what raw.
Add soya sauce and chilly sauce. Saute for another minute.
Then include noodles in the sauce mixture.
Mix well and add pepper powder.
Serve hot.

Velluli murukku / Garlic Murukku
We have a store near my house where we used to buy different varieties of murukku and one of them was velluli murukku. Basically that store was run by a tamil family and after the store came into our locality people stopped making murukku or pindi vantalu at home.I remember for 250 gms its was 10 rupees, not sure how much it is now...it's been almost 3 years i had anything from that store.
Of all the murukkus i used to love this murukku and mom used to buy that for me. I took this recipe from my favourite book Kanta mani Vantalu. My kids too love to eat murukku. As now i am at home with kids as they are having Spring break i had some time today, so made these. These will last for few days not to worry about what snacks to pack for school next week. Here is the recipe:-
Ingredients:-
Besan/Sangapindi 2 cups
Rice flour/Biyam pindi 1 cup
Seasame seeds 1 tbsp
Cummin powder 1 tsp
Hing a pinch
Ghee 4 tbsp
Oil for deep frying
Salt to taste
Garlic 3
Red chilly whole 4
Little water
Grind garlic and red chilly with water. Just make a coarse paste.
Method:-
Mix all the dry ingredients.
Add ghee, garlic and red chilly paste.
Add enough warm water and make a hard dough.
I used 3 eyed holes in the murukku maker.
Grease the murukku maker and fill it with the dough.
Heat oil. Press small batches on a plate like the below pic and slowly leave them in the hot oil.
Fry until the bubbles subsides and take them out on a tissue.
Once cool store them in a air tight container.

Left over tomato bath patties
Tomato bath is what i am making almost twice a week when i don't have dosa batter. Once or twice i had much tomato bath left. Once i took it for lunch too. Last time i had i made these patties. Younger kid doesn't like upma but when i made these patties she just loved it.Not much ingredients are required for these delicious patties. Here is the recipe :-
Ingredients:-
Left over tomato bath/upma 2 small cups
Mozzarella cheese grated 1/2 cup
Bread crumbs 1/2 cup
Amchur powder 1 tbsp
Red chilli powder 1/4 tsp
Oil for shallow frying
Method:-
Mash tomato bath with cleaned hand. Add chilly powder and amchur powder to it. Mix well.
Make small rounds
Then make a deep hole and stuff in mozzarella cheese
Close the hole and pat into small round shape patties
Spread bread crumbs on a plate. Place a patty on the bread crumbs and coat both side of the patties with the bread crumbs.
Take 3 tbps of oil in a pan.
When hot slowly leave the prepared patties into the oil. Keep the flame in low and fry both the sides until golden colour.
Serve hot with ketchup or sauce. I served it with sweet chutney (store brought).

Cheesy baked vegetable and rice
Today is one of the day that you are bored of eating the same stuff. So for a change from rice and rasam on this Saturday made this baked dish. Me and my younger daughter liked it but my elder daughter didn't like as she hates veggies. I adapted this recipe from Tarla Dalal. Here is the recipe:-
Ingredients:-
Cooked rice
Butter 2 tbsp
Milk 3 tbsp
Salt for taste

White Sauce
Butter 3 tbsp
Cheddar cheese slice 1
Boiled Veggies (Carrot and Beans)
Pepper 1 tsp
Milk 1/2 cup
Maida 3 tbsp
Chopped onions 1
Green chilies 2
***************
Mozzarella Cheese 1/4 cup
Method:-
Take a pan, heat butter and add rice. Mix butter with rice add salt and milk. Keep aside.
In the same pan add butter. When hot add onions and green chilies. Saute onions till they are brown colour. Add maida. Saute for 3 minutes.
Then add milk. Let it boil for 2-3 minutes. Add boiled veggies,salt and pepper.
Pre-heat oven for 200 Celsius. Take Rice in a cake pan. Press the rice. Add the sauce over the rice.
Spread grated cheese on the rice. Bake for 15-20 minutes in the over.
Serve hot.

Sabudana Vada
When i was newly married and re-located to oman i was so bored sitting at home and wait for someone to talk to me. Having worked after collage and never left alone at home i used to get so depressed. In oman you wont be able to go alone unless you have driving licence and a car. I newly wedded went to oman was not intended to take licence. Only entertainment i had was TV and me not found of watching serials. I carried few recipes books and husband used to get magazines for me to read. So my favorite pass time was to cook. They were few disasters which husband still remembers after 14 years. So many marks of burns on the hands and which i longer have on my hands. And i remember few recipes which i used to do very often and my favourite too. One among them was Sabudana vada which i got from a monthly magazine. That magazine used to have four indian recipes every month and i used to save the paper cuttings. I still have them in hyderabad. Here goes the recipe:-
Ingredients:-
Sabudana or Sagobiyam 1 cup
Butter milk 2 cups
Grated potato 1
Onions finely chopped 1
Green chillies 2
Rice powder 4-5 tbsp
Red chilly powder 1 tsp
Salt to taste
Oil for deep frying
Method:-
Soak sabudana in butter milk for 1-2 hrs.
Take the soaked sabudana in a strainer and let the excess liquid drains.
Now mix all the ingredients. If the mixture is too liquid, rice flour can be added.
Heat oil.
Make small patties and deep fry in batches on a medium flame.
Once the patties turn golden colour drain them on a tissue. These patties didnt take much oil. My tissue didnt had any oil on it.
Serve only hot with any sauce of your choice. When cold these patties become soggy...serve only hot.

Apple Cinnamon Milk Shake
An apple a day keeps a doctor away. I hate apple. When i was pregnant every other person used to tell me to eat but i hardly ate them. My kids like to eat only when i slice them and they prefer with skin. The other day i have many apples as i got few them from the temple. I made this shake. They loved it so do i....
Ingredients:-
Apples 2 sliced and seeds removed
Milk 1 packet
Cinnamon powder 1/2 tsp
Sugar 5-6 tbsp
Ingredients:-

Method:-
Take apple slices,cinnamon powder, sugar and little milk in a mixer. Crush apple into fine paste. Add the rest of the milk. Let it cool in the fridge for half an hour. Serve cool...

Kids Lunch box recipes e-book by Indus ladies and American Chop Suey

I have not neglected you...I am really pressed with the time and not getting time to blog. I have quite a few food pictures i need to blog and also i am late in writing that my recipe has been published in a e-book at Indus ladies. I am thankful to Indus to include my recipe for Kids Lunch box recipes and this is the second time they included me in the ebook.Do check the yummy lunch box recipes shared by passionate moms and food bloggers. Previously in the year 2011 my recipe of Kadu Ka halwa was included in 100 Yummy sweet recipes. Click the picture below to check the lunch box recipes book. Now coming to today's recipe is American Chop suey. This i ate first when my sister brought home a take away.I love this dish as your noodles are crispy with the sauce on the top. Has to eat hot.This i made for sunday's lunch. Yes sometimes instead of making biryani i order biryani for husband and elder daughter. And American chop suey for myself and younger girl.Here is the recipe :-
What you need:-
Noodles
Oil 4 tbsp
For Sauce
Soya sauce 2 tbsp
Vinegar 1 tsp
Chilli Sauce 1 tbsp
Tomato Sauce 5 tbsp
Corn flour 2 tbsp
Pepper powder 1tsp
Take a pan. Mix soya sauce,vinegar,Chill sauce,tomato sauce and corn flour. Keep it on slow flame boil until the sauce thickens an add 1 tsp pepper powder.
For Noodles
Boil noodles and drain water. Spread them on a wide plate and let it cool down for 5 minutes. In a big tawa add oil and saute noodles until crispy.
Veggies
Take which ever veggies you prefer. I took Cauliflower,broccoli,beans,carrot and capsicum.
Heat 3 tbsp of oil and add chopped onions. Saute for a while. Add all the veggies and saute on a high heat. Sprinkle ajinamoto a pinch. Saute for a while and sprinkle salt.
Add these veggies in the sauce.
When serving. Pour the above sauce on the fried noodles and serve it individually.

Mini Pizza
I have been thinking to upload on my blog what i give for my kid's lunch boxes. Not getting much time on the net, what ever time i get i am spending it on crochet. It will be winter in another month and want to do more stuff for kids. Seriously i need a break. Now coming to mini pizza not much frills in it, just a simple and quick pizza with brown bread for lunch box.
Ingredients:-
Brown bread
Tomato sauce
Mozerella cheese
Chopped onions
Chopped tomato
Chopped capsicum
Method:-
Cut the sides of the bread, if possible cut the bread into round circle.
Spread tomato sauce. Spread onions,tomatos and capsicum.
Grate mozerella cheese on each slice.
Preheat oven and bake until the cheese starts melting.
Voila eazy pizza is ready.
Isn't it super easy.
