Chicken Tikka

 My blog has many non-veg dish, we family are meat lovers. Trying hard to reduce eating meat. We have considerably reduce eating mutton/lamb. It's mostly chicken we eat that too twice a week, Saturday and Sunday. Daughter asked me make this tikka. We used to eat very tasty Chicken tikka at a restaurant in Dubai. I used my own masala for marination and grilled it. Here is the recipe.

Ingredients:-

Boneless chicken pieces 10
Food colour few drops
Thick curd 1 /2 cup
Salt to taste
Oil 3 tbps
Garlic paste 2 tbps
Garam masala powder 1/2 tsp
Red chilly powder 1/4 tsp
Coriander powder 1/2 tsp
Onions big square pcs

Method:-

Mix curd with other ingredients. Add chicken pieces. Let the marinate rest for 4-5 hours.

Soak the barbecue sticks in water  for 1 hour.

String the chicken pieces and onion pieces alternatively.

On a baking tray spray oil.

Place the tikkas with enough space between each stick.

Grill for 15 minutes on both the sides.

Serve hot with salad.

Hot Dog Sandwich


 This is one more quick Sandwich to prepare. It hardly takes time. When i was pregnant with my 2nd child i used to crave for hot dog sandwich from Eppco petro pump Dubai. On my way back from office husband used to buy it for me. This is my version of hot dog sandwich.

Ingredients:

Chicken sausages 4
Hot dog bun 4
Hot and chilly Sauce (maggie)
Mustard Sauce
Chopped onions
Lettuce
Mayonnaise

Method:-

Fry chicken sausages for 4-5 minutes as they are pre-cooked.

Toast the bun on both the sides.

Spread Mayonnaise and chilli sauce on each side of the bun.

Spread lettuce and chopped onions.

Place hot dog on the lettuce and onions.

Spread mustard sauce.

Close the bun and eat it...

Bhujiya Sandwich


 This is street food in Hyderabad. This sandwich we used to eat near Anjali theatre in General bazar in secunderabad. When ever we used to go to general bazar for shopping we used to either eat this or chat. The main dis-advantage of living out of the country is that you wont get all those street food here. Even if we get it doesnt taste the same. We always eat brown bread but this sandwich taste good with white bread. Here is the recipe:-

White bread 4 slices
Butter to spread on the bread slices
Green chutney (mint chutney)
Tomato ketchup
Onion chopped 2
Tomato sliced
Cucumber sliced

Method:

Spread butter on both side of the bread.

Then spread tomato ketchup on top of the butter and spread green chutney on top of another slice.

Place cucumber slices and tomato slices on one slice and cover it with another slice of bread.

Mix sev and chopped onion.

Spread sev and onions on the top of the sandwich.

Coconut Rice 2



 This is typical andhra style coconut rice.I have another version of coconut rice here. Difference between both is that in this i took milk from coconut and made the rice where as i sauted grated coconut  and mixed that with the rice. This coconut milk my mom used to make. Those days she used to use mortal and pestle to grind coconut and used to remove milk. Here is the recipe :-

Basmati rice 1 large cup
Coconut milk 1 large cup
Water 1 large cup
Oil 1 tbsp
Onions sliced 1
Green chillies silted 4
Ginger garlic paste 2 tbsp
Cinnamon 2 sticks
Cloves 4
Elachi 1
Coriander leaves 1/2 bunch chopped
Mint leaves 1/2 bunch chopped
Salt to taste

Method:-

Take oil in a deep bottom pan. Add all the masala,onions and green chillies. Saute for a while. Add ginger garlic paste. Saute for 2-3 mintes.

Then added rice,coriander leaves and mint leaves. Mix well and sauté for a while. Add salt.

Add water and coconut milk. Mix well and let it come to a boil. Then simmer and cook until the rice is cooked and no water is left.

Serve hot with Chicken.

Chicken fry with Poppy seeds


This fry is some what different from chicken fry i have in my blog. This chicken has a different taste as poppy seeds are added to the fry at the end. Usually poppy seeds are grounded to fine paste and added to the curries or fries and are cooked along with the chicken/mutton or veggies. But in this poppy seeds are added later. Here is the recipe:-

Ingredients:

Chicken 1 pound
Ginger garlic paste 2 tbsp
Red chilly powder 1 tbsp
Turmeric powder 1/2 tsp
Salt as per taste
Oil 2 tbsp
Curd 1 cup
Chopper coriander 1/4 cup

Marinate all of the above ingredients for 10-15 minutes.

Take a cooker add 2 tbsp of oil. When hot add chicken and water. Mix well and pressure cook for 2 whistles.

Now for fry.

Cinnamon 1
Cloves 3
Shahi zeera 1 tsp
Zeera 1/2 tsp
Onions 1
Ginger garlic paste 1tsp
Turmeric 1/4 tsp
Garam masala powder 1 tbsp

Take a kadai. Add 2 tbsp of oil. Once hot add cinnamon,cloves,shahi zeera and zeera for a while. Add onions and saute until the onions are light brown in colour.

Add water from the chicken. Cook until the water thickens into gravy.Now add garam masala powder and then add chicken.  Fry until all the gravy evaporates. Now add 1 tsp coconut powder , poppy seeds 1 tbsp and chopped coriander  leaves 1/2 cup.Saute for another 2 minutes and lastly add 1 tbsp of lemon juice.

Serve hot with roti or hot rice.
